The Enfield wines are some of the most structured, expressive and vibrant California wines we have ever tasted. Working only with small vineyards and independent growers, every step of the process is guided by the intent to maximize this character of terroir. Grapes are harvested for balance and the wines are all given the chance to ferment naturally. Waterhorse Ridge is a 2-acre dry-farm, organic, no-till vineyard located a mere 5 miles from the Pacific ocean. This site is among the coolest in the California area. A co-ferment of 80% cabernet sauvignon, merlot, cab franc and petit verdot. 30% of the wine is whole cluster. After a 2 week ferment, the wine is aged for 18 months in a mix of 500 and 225L barrels (10% new) before bottled unfined and unfiltered.
