Ernest Vineyards - 'Edaphos' - Bei Ranch Cabernet Sauvignon - 2019

The Bei Ranch was planted about 30 years ago far atop the coastal mountains west of the town of Cazadero. Hugo soils overlay volcanics on this dry farmed site. Cool, foggy nights interrupted by hot, sun drenched days drive concentration while maintaining the purity of the Cab Sauv varietal. 100% whole cluster primary with native yeasts. Long amount of time on the skins with minimal cap movements allow for a naturally balanced wine showing bright red fruit supported by a bit of green with rm tannin and lengthy acid. Aged for 20 months in 228L vessels. Bottled unned and unltered with 20ppm SO2.
