100% whole cluster pinot noir grapes. 3-5 day cold maceration before fermentation on native yeast. Pressed after 18 days on skins. 25% of the batch is aged in new French oak barriques for 9 months. Unfiltered and unfined. 2500 ft. elevation in the South Skyline region of the Santa Cruz Mountains. Ascona vineyard is farmed with organic practices. The soils are ancient marine sedimentary deposits of loosely consolidated sandstrone and siltstone. Fod and cool Pacific breezes temper the vines for a strong diurnal range that permits phenolic ripening while preserving fresh natural acidity.
