Made from 50 year old Xarel-lo grapes which are one of the dominant varieties in a classic Cava sparkling blend. This wine is organic and vegan. Fermented in stainless steel tanks and left to age on its own lees (yeast) for 3 weeks to impart softness and dairy/autolytic character to the wine.
